‘Toque’, the Arabic word for hat, was the initial name given to the chef’s hat by famed French chef Marie-Antoine Carême.

Some records say that Marie-Antoine Carême’s own toque blanche was 18 inches tall and had to be supported by pieces of cardboard inserted into the hat itself!
